Karate/Iaido or Aikido/Jodo?
I have the option to take either Uechi Ryu Karate classes along with Iaido, or Aikido along with Jodo (not Judo).
Which would be to my benefit, or more of a challenge?
And which in your opinion is more interesting?

both options are really interesting. depends on what your objective in learning is.
karate/iaido:
striking oriented, kata, tournaments, sparring..... and sword drawing. good stuff.
aikido/jodo:
throws & takedowns, no competition whatsoever (contemplative)..... and stick work. good stuff.
the sword work has little daily application, because it is a sword, but it is still highly informative. it is also beautiful to do and watch. you will likely enjoy it. aikido is difficult to perform realistically unless you have been doing it for a long, long time. however, the stick work will have a lot of daily application. if you are into meditative self exploration, aikido is your best bet.
check out both schools, take a free class (most schools offer them), and maybe even take a private with each instructor. ask the students and instructors questions and find out which group pursues activities in accordance with your goals.
opinion as to which is more interesting? don't have one. have done them all, actually. and all of them were a blast.
